Ok.. let’s be honest. Life is better with great food! However, if what you’re eating is causing you pain and discomfort… the struggle is real. My goal when creating this site was to have the ability to share with you recipes and tips that I use in my daily life to create and enjoy delicious foods that are easy to prepare, and may help you avoid painful days all while enjoying foods that I hope you will love. Healing AS I cook is my outlet to share the journey of learning to accept the fact that my body is attacking itself. I have lived with AS since 2012. From a misdiagnosis to multiple steroid shots that seemed to do nothing, and ultimately feeling so frustrated and miserable, I was finally referred to rheumatologist who originally diagnosed me with sacroiliitis, then finally Ankylosing Spondylitis. I began using an injectable and found great results. Ibuprofen became part of my daily routine, sometimes up to 2400mg in a 24hr period. But being able to feel “normal” was the most important thing to me at that time. Gosh I was only 47 and had so much pain for the last couple of years prior to diagnosis, I felt that if this is what it took to feel like me again, I was more than willing to do it! But, as with everything else related to getting older, taking that much Ibuorofen and basically ignoring signs that continued to point to over all health, eating and the best exercise for my condition, I decided to take a proactive approach to using my love for cooking and investigating the science of food and how it can affect our bodies in terms of inflammation and pain. As I experimented with different foods and began to have fun and use my experience in the kitchen to create delicious meals, snacks and desserts from I scratch with ingredients to either reduce inflammation or not to cause it. I felt somehow empowered and excited that I could actually be in control, to some degree, on how I might feel the next day just by choosing what I put in my body. ere to avoid some of the usual suspects for sensitivity such as gluten, dairy and sugar. Within these recipes, you’ll also find many that are plant based, vegetarian and vegan as well.
